Rural Salad

A vibrant rural salad combining fresh tomatoes, crisp cucumbers, tangy feta or blue cheese, and briny olives, perfect for a light, refreshing meal or side dish.

Ingredients

  • 4 large tomatoes
  • 2 cucumbers
  • 6 Tbsp. crumbled Feta or Blue cheese
  • 12 pitted ripe olives
  • 4 Tbsp. vegetable oil
  • 1/2 Tbsp. basil
  • 1/2 tsp. salt
  • dash of pepper

Instructions

  1. Peel tomatoes if desired and slice them thinly.
  2. Score cucumbers lengthwise with a fork and slice them thinly.
  3. Arrange layers of tomatoes and cucumbers in a shallow bowl.
  4. Sprinkle with crumbled cheese and halved olives.
  5. Combine vegetable oil, basil, salt, and pepper in a small bowl.
  6. Pour the dressing over the arranged vegetables.
  7. Chill before serving. For a tangier flavor, add 2 to 4 teaspoons of lemon juice or wine vinegar to the dressing.
