- Peel tomatoes if desired and slice them thinly.
- Score cucumbers lengthwise with a fork and slice them thinly.
- Arrange layers of tomatoes and cucumbers in a shallow bowl.
- Sprinkle with crumbled cheese and halved olives.
- Combine vegetable oil, basil, salt, and pepper in a small bowl.
- Pour the dressing over the arranged vegetables.
- Chill before serving. For a tangier flavor, add 2 to 4 teaspoons of lemon juice or wine vinegar to the dressing.
