Ingredients

  • 3 cups onion, coarsely chopped

  • 2 large eggplant, peeled, cut in 1-inch cubes and soaked in salt water 20 minutes (drain)
  • 1 (8 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 5 cloves garlic, minced
  • 1 (6 oz.) can pitted black olives
  • 1/2 cup pitted green olives
  • 1/2 cup red wine vinegar
  • 3 tablespoons sugar
  • 1/4 cup capers
  • 1.5 teaspoons oregano
  • 1 tablespoon salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon pepper

Instructions

  1. In a 4-quart casserole, sauté onion, bell pepper, and celery in olive oil.
  2. Cover with wax paper and cook on High for 30 minutes, stirring once or twice.
  3. Stir in the eggplant.
  4. Cover and cook on High for another 30 minutes.
  5. Stir once.
  6. Add tomato sauce and tomato paste.
  7. Cook on High for 10 minutes.
  8. Stir in garlic, black olives, green olives, vinegar, sugar, capers, oregano, salt, and pepper.
  9. Cook on High for 5 minutes.
