Ingredients

  • 1 cup softened butter
  • 1/2 cup sifted powdered sugar
  • 1 teaspoon vanilla
  • 2 1/4 cups plain flour
  • 1/4 teaspoon salt
  • 3/4 cup finely chopped pecans

Instructions

  1. Mix softened butter, sifted powdered sugar, and vanilla thoroughly.
  2. Measure plain flour by sifting or dip-level method, then add to the butter mixture along with salt, blending well.
  3. Stir in the finely chopped pecans.
  4. Chill the dough for at least 30 minutes.
  5. Form the dough into 1-inch balls.
  6. Place the balls on an ungreased baking sheet.
  7. Bake at 350°F (175°C) on the middle shelf for 8 to 12 minutes, checking for browning on the bottoms.
  8. While still warm, roll the cookies in powdered sugar.
  9. Allow to cool.
  10. Re-roll the cookies in powdered sugar for a second coat, and a third for a whiter appearance if desired.
