Rustic Bison Chili
Ingredients
- 1 lb ground buffalo meat ⓘ
- 1 cup onion (chopped) ⓘ
- 2 teaspoons garlic (minced) ⓘ
- 1 cup green pepper (chopped) ⓘ
- 3 tablespoons chili powder ⓘ
- 2 teaspoons cocoa powder ⓘ
- 2 teaspoons salt ⓘ
- 1 teaspoon oregano (crush in palm of hand) ⓘ
- 1 teaspoon cinnamon ⓘ
- 1 teaspoon cumin ⓘ
- 1/2 teaspoon pepper ⓘ
- 1/4 teaspoon allspice ⓘ
- 2 (14 1/2 ounce) cans tomatoes with juice (chopped or crushed or diced) ⓘ
- 2 (8 ounce) cans tomato sauce ⓘ
- 1 (15 ounce) can pinto beans (rinsed and drained) ⓘ
- 1 (15 ounce) can black beans (rinsed and drained) ⓘ
- 1 cup water ⓘ
- 1 (7 ounce) can diced green chilies ⓘ
Instructions
- Coat the surface of a large pan with non-stick cooking spray.
- Saute meat and stir to crumble for 5 minutes.
- Add onion, garlic, and pepper; cook for another 5 minutes.
- Mix into the meat mixture; chili powder, cocoa powder, salt, oregano, cinnamon, cumin, pepper, allspice and cook for 2 minutes.
- Add tomatoes, tomato sauce, beans, water, and chilies.
- Stir and simmer for 60 minutes.
- Serve with shredded cheese and warmed tortillas.
