- Prepare the apples by peeling, coring, and slicing them; set aside.
- Make pastry, roll out the bottom crust, and line a 10-inch pie pan.
- Mix sugar with flour, and sprinkle 3 tablespoons of this mixture over the bottom pie crust.
- Add half the sliced apples, a layer of cheddar cheese cubes, half the remaining sugar/flour mixture, and the remaining apples.
- Dot with melted butter, add the remaining sugar/flour mixture, and pour molasses over the top.
- Dampen the pie crust around the rim.
- Roll out the top crust and place it over the filled pie.
- Trim both crusts to 1 inch over the rim, tuck under, and flute the edges.
- Cut vents in the top crust and bake at 400°F for 50 to 60 minutes.
