Hot Spinach Cheese Dip

A spicy, cheesy hot spinach dip packed with hot chilies, tomatoes, and Monterey Jack cheese, perfect for parties and gatherings with tortilla chips or bread.

Ingredients

  • 1 can Ortega hot chilies, chopped
  • 1 small onion, chopped
  • 3 Tbsp vegetable oil
  • 2 tomatoes, chopped
  • 10 oz thawed spinach, squeezed dry
  • 1 Tbsp red wine vinegar
  • 8 oz cream cheese
  • 1 cup half and half
  • 2 cups grated Monterey Jack cheese

Instructions

  1. In skillet, cook onion and hot chilies in oil until softened, approximately 4 minutes.
  2. Add tomatoes and cook 2 more minutes.
  3. Transfer the cooked mixture to a bowl and stir in spinach, vinegar, cream cheese, Monterey Jack cheese, and half and half.
  4. Season with salt and pepper to taste, approximately 1/2 teaspoon.
  5. Pour the mixture into a buttered baking dish and bake at 400°F for 20 to 25 minutes.
  6. Serve hot with tortillas.
