Ingredients

  • 2 dry yeast
  • 1/2 c. warm water
  • 1 Tbsp. sugar
  • 1/2 c. flour
  • 1/8 oz. saffron
  • 1 c. water
  • 9 1/2 c. flour
  • 2 c. sugar
  • 1 tsp. salt
  • 1 1/2 c. shortening

Instructions

  1. Dissolve yeast in 1/2 cup warm water; add sugar and 1/2 cup flour and let rise.
  2. Put saffron in 1 cup water; simmer and cool to lukewarm.
  3. Sift 9 1/2 cups flour, 2 cups sugar, and salt, then cut in shortening.
  4. Add currants and nutmeg.
  5. Add cooled saffron water to the mixture.
  6. Add at least 2 cups lukewarm water; let rise until doubled in size.
  7. Form the dough into buns and place on baking pans.
  8. Let the buns rise until nearly doubled.
  9. Bake at 350°F for 25 to 30 minutes.

Tips & Substitutions

For a richer flavor, consider adding a pinch of cardamom or cinnamon to the dough. If you run out of saffron, a small amount of turmeric can provide color, though it won't replicate the unique taste. Ensure your water isn't too hot when dissolving the yeast, as this can kill it. Letting the dough rise in a warm place will yield better results.

Serving Suggestions

These saffron buns are delightful on their own but can be enhanced with a spread of butter or your favorite jam. They pair beautifully with Sweet And Sour Lentils With Fine Noodles for a complete meal. Serve alongside a warm cup of tea or coffee for a cozy snack, or enjoy them as a festive treat during holiday gatherings.

Storage & Reheating

Store leftover saffron buns in an airtight container at room temperature for up to 3 days. For longer storage, freeze them individually wrapped in plastic wrap and then in a freezer bag. To reheat, place them in a 350°F oven for about 10 minutes or microwave for 15-20 seconds until warm.

Frequently Asked Questions

Can I make these saffron buns ahead of time?

Yes, you can prepare the dough ahead of time and let it rise in the refrigerator overnight. Just bring it to room temperature before shaping and baking. This can enhance the flavor as well and saves time on the day you plan to serve them.

What can I substitute for shortening in this recipe?

You can substitute butter or margarine for shortening in equal amounts to add a richer flavor. If you're looking for a vegan option, coconut oil or a vegan butter alternative works well. Keep in mind that this may slightly alter the texture of the buns.

How can I tell when the buns are done baking?

The saffron buns are done when they are golden brown on top and sound hollow when tapped on the bottom. You can also use a toothpick inserted in the center; it should come out clean. If they need more time, check every couple of minutes to avoid overbaking.
