A refreshing and fruity salad featuring sweetened gooseberries, citrus flavors, crunchy celery, and nuts, perfect for light summer gatherings or brunches.

Ingredients

  • 1 (1 lb.) can gooseberries, sweetened
  • 2 (3 oz.) packages lemon gelatin
  • 1/2 cup sugar
  • 2 cups orange juice
  • 2 cups celery, chopped
  • 1/2 cup nuts, chopped

Instructions

  1. Drain the gooseberries, reserving the syrup.
  2. Add water to the syrup to make 1 3/4 cups.
  3. Heat 1 cup of the syrup mixture to a boil.
  4. Add lemon gelatin and sugar to the boiling syrup and stir until dissolved.
  5. Stir in the remaining syrup mixture and orange juice.
  6. Chill until the mixture is partially set.
  7. Stir in the gooseberries, chopped celery, and chopped nuts.
