Ingredients

  • 1 cup prepared jasmine rice
  • 1 chicken breast, grilled and diced
  • 1 cup ham steak, grilled and diced
  • 1 cup pork sausage, grilled and diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives
  • 1/2 cup sliced radishes
  • 1 can artichoke hearts, halved
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 bunch scallions, diced
  • 1/2 cup champagne vinegar
  • 1/3 cup good olive oil

Instructions

  1. Mix all the vegetables, meats and rice together.
  2. Mix the champagne vinegar and olive oil with the mustard and dress.
