Salmon ball is a delightful appetizer that combines the rich flavors of canned salmon with creamy cheese and a zesty kick from horseradish and lemon juice. Ingredients

  • 2 c. drained canned salmon
  • 1 (8 oz.) pkg. soft cream cheese
  • 1 Tbsp. minced onion
  • 1/4 tsp. salt
  • 1 Tbsp. lemon juice
  • 1 tsp. prepared horseradish
  • chopped parsley

Instructions

  1. In a bowl, combine all ingredients except parsley.
  2. Mix well and refrigerate for about 4 hours or until firm enough to shape into a ball.
  3. Shape the mixture into a ball and roll it in chopped parsley (and chopped nuts, if desired).
  4. Refrigerate for at least 1 hour before serving.
  5. Serve with crackers or small slices of rye bread.
