Salmon, Corn And Barley Chowder
Ingredients

- 1/4 cup chopped onion ⓘ
- 1 garlic clove, minced ⓘ
- 2 1/2 cups reduced-sodium chicken broth ⓘ
- 1/4 cup quick-cooking barley ⓘ
- 1 tablespoon water ⓘ
- 1 tablespoon all-purpose flour ⓘ
- 4 ounces salmon, drained ⓘ
- 1 cup corn ⓘ
- 1/3 cup 2% low-fat milk ⓘ
- 1/2 teaspoon chili powder ⓘ
- 1/4 teaspoon cumin ⓘ
- 1/4 teaspoon oregano ⓘ
- 1/8 teaspoon salt ⓘ
- 1 tablespoon minced cilantro ⓘ
- 1/8 teaspoon black pepper ⓘ
Instructions
- Saute garlic and onion for a few minutes, until onion is tender.
- Add broth and bring to a boil. Stir in barley.
- Cover, reduce heat and simmer 10 minutes or until barley is tender.
- Stir water gradually into flour in small bowl until smooth. Set aside. Remove and discard bones and skin from salmon. Flake into bite-sized pieces.
- Add salmon, corn and milk to saucepan. Stir in flour paste, chili powder, cumin, oregano and salt. Simmer 2 to 3 minutes or until slightly thickened. Stir in cilantro and pepper.
