Ingredients

  • 7 3/4 oz. can salmon
  • 1/4 tsp. salt
  • 1/4 tsp. seasoned salt (optional)
  • 1 tsp. lemon juice
  • 1 egg
  • 1 Tbsp. melted oleo
  • few drops Worcestershire sauce

Instructions

  1. The day before serving, drain and remove bones from salmon. Break salmon into small pieces with a fork.
  2. Add salt, lemon juice, beaten egg, melted oleo, and Worcestershire sauce; mix thoroughly.
  3. Shape the mixture into 4 patties, wrap in plastic wrap or aluminum foil, and refrigerate overnight.
  4. The next day, crush enough cornflakes to make a cup of fine crumbs.
  5. Roll each patty in cornflake crumbs.
  6. Saute the patties in melted oleo until browned on both sides.
  7. Drain on paper towels before serving.

Tips & Substitutions

For a crispier texture, consider adding a tablespoon of flour or breadcrumbs to the salmon mixture. If you’re out of Worcestershire sauce, soy sauce can be a great substitute. Make sure to refrigerate the patties overnight as this helps them hold their shape while cooking. You can also use canned tuna if salmon isn’t available.

Serving Suggestions

Serve the salmon croquettes hot, garnished with a wedge of lemon and a dollop of tartar sauce for extra flavor. They pair beautifully with a crisp green salad or steamed vegetables. For a heartier meal, consider serving alongside rice or potatoes. This dish can also complement other seafood recipes like Battered Fish.

Storage & Reheating

Store any leftover salmon croquettes in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a skillet over medium heat for about 3-4 minutes on each side, or until heated through and crispy. You can also reheat them in the oven at 350°F for about 10-15 minutes.
