Creamy salmon mousse with fresh dill, lemon, and a hint of Tabasco offers a delicate appetizer perfect for special occasions or elegant gatherings.

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1/2 cup boiling water
  • 1/2 cup Miracle Whip
  • 1 tablespoon lemon juice
  • 1 tablespoon finely grated onion
  • dash Tabasco
  • 1/4 teaspoon sweet paprika
  • 1 teaspoon salt
  • 2 tablespoons finely chopped dill
  • 2 cups finely flaked poached fresh salmon or canned salmon, skin and bones removed

Instructions

  1. Soften gelatin in cold water.
  2. In a large mixing bowl, stir in the boiling water and whisk the mixture until gelatin dissolves. Cool to room temperature.
  3. Whisk in the Miracle Whip, lemon juice, finely grated onion, Tabasco, paprika, salt, and chopped dill.
  4. Refrigerate for 30 minutes or until mixture begins to thicken slightly.
  5. Fold in the flaked salmon.
  6. Whip the cream and gently fold into the mixture.
  7. Put in a 6 to 8 cup bowl or mold; cover and chill at least 4 hours.
  8. Serve with crackers, toast, or black bread. Can be served as a main course, garnished with watercress.
