Ingredients

  • 16 oz. can salmon, drained
  • 1 medium onion, chopped
  • 1/4 cup celery, chopped
  • 4 eggs
  • 2 cups low-fat milk
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon dried dill weed, crumbled
  • 1/8 teaspoon pepper
  • 4 medium potatoes, sliced thin

Instructions

  1. In a large bowl, combine the salmon, chopped onion, chopped celery, eggs, milk, 1/2 teaspoon salt, dried dill weed, and pepper.
  2. Mix well to combine all ingredients evenly.
  3. Place half of the sliced potatoes in a greased 1 1/2-quart baking dish.
  4. Sprinkle the potatoes with 1/2 teaspoon salt.
  5. Spread half of the salmon mixture over the potatoes.
  6. Repeat with the remaining potatoes, salt, and salmon mixture.
