Tender salmon steaks coated in crunchy cornflake crumbs, cooked quickly in the microwave with a lemony butter sauce, perfect for a flavorful, speedy seafood meal.

Ingredients

  • 1 egg
  • 1 Tbsp. milk
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 4 salmon steaks (1/2 to 1-inch thick)
  • 1/2 c. cornflake crumbs
  • 2 Tbsp. butter or margarine

Instructions

  1. In a shallow bowl, combine egg, milk, lemon juice, and salt; beat well.
  2. Dip each salmon steak in the mixture, then in cornflake crumbs to coat.
  3. Put butter in a microwave-safe dish and cook on power 9 for 1 1/2 minutes until melted.
  4. Arrange the coated salmon steaks in the dish with melted butter.
  5. Cover the dish with plastic wrap and cook on power 9 for 5 to 7 minutes, until the fish flakes easily with a fork.
  6. Let stand for a few minutes; the internal heat will finish cooking the fish.
