Ingredients

  • 1 small onion
  • 1 small green pepper
  • 2 to 5 jalapeno peppers
  • 1 large can diced tomatoes
  • 1 Tbsp cilantro leaves
  • 1/2 tsp coarse black pepper
  • 1/4 tsp salt
  • 1/4 cup parsley flakes
  • 1 Tbsp corn or vegetable oil

Instructions

  1. Chop onion, green pepper, jalapeno peppers, and garlic into small pieces.
  2. Saute the chopped vegetables in oil for 5 minutes.
  3. Add the diced tomatoes to the sautéed vegetables.
  4. Add cilantro leaves, black pepper, salt, parsley flakes, and stir well.
  5. Simmer over low heat for 20 to 30 minutes.
  6. Let the salsa cool before serving.
  7. Serve with tortilla chips.
