Salt Cod With Cabbage

Ingredients

  • 1 lb Salt Cod
  • 1 Red Pepper (seeded and chopped)
  • 1 onion (minced)
  • 1 clove garlic (crushed)
  • 1/4 cup parsley (chopped)
  • 3 tbsp olive oil
  • 5 cups cabbage (shredded)
  • 3 tomatoes (peeled, seeded and chopped)
  • 1/2 cup dry white wine
  • Pepper to taste

Instructions

  1. Soak 1 lb of salt cod in cold water to cover, changing the water several times, for 24 hours and then drain the fish.
  2. Remove any skin and bones, dry fish with a paper towel.
  3. Cut into 2 inch pieces.
  4. In a large skillet saute onion, red pepper, garlic and parsley in olive oil until the onion is softened.
  5. Add cabbage, tomatoes, white wine, the cod and pepper.
  6. Combine mixture and simmer it partially covered for 10-15 minutes or until the cabbage is tender and the cod flakes easily when tested with a fork. (Serves 4.)
