Ingredients

  • 3 medium potatoes
  • 2 Tbsp. cornmeal
  • 1 tsp. sugar
  • 4 c. boiling water
  • 2 c. lukewarm milk
  • 1 c. water
  • 1/8 tsp. soda
  • 2 tsp. salt
  • 2 Tbsp. melted shortening

Instructions

  1. Peel and slice the potatoes.
  2. Add cornmeal, sugar, salt, and boiling water to the potatoes.
  3. Wrap the mixture in a heavy cloth.
  4. Cover and allow to stand in a warm place overnight.
  5. Remove the potatoes from the mixture.
  6. Add lukewarm milk, water, soda, salt, and melted shortening.
  7. Add enough flour to make a stiff dough that can be kneaded until smooth and elastic.
  8. Divide the dough into 3 loaves.
  9. Place the loaves in well-greased pans.
  10. Cover and let rise until doubled in size.
  11. Bake in a preheated oven at 400°F until done.
