San Juan Squash

Instructions
- Slice squash in half lengthwise and scoop out seeds.
- Parboil for 10 minutes.
- Put in single layer in shallow pan; sprinkle with salt (chili powder also), chopped onion and bread crumbs.
- Top each half with bacon slice or cooked carne adobado.
- Bake at 350° with water just to cover bottom of pan until squash is tender and bacon is browned.
- Serves 4 to 6.
