San Juan Squash

Ingredients

  • 3 medium yellow crookneck squash or zucchini
  • 6 slices bacon
  • 1/3 c. chopped onions
  • 1/2 c. dry bread crumbs
  • 1 Tbsp. butter or margarine
  • 1 tsp. salt
  • 1 tsp. chili powder

Instructions

  1. Slice squash in half lengthwise and scoop out seeds.
  2. Parboil for 10 minutes.
  3. Put in single layer in shallow pan; sprinkle with salt (chili powder also), chopped onion and bread crumbs.
  4. Top each half with bacon slice or cooked carne adobado.
  5. Bake at 350° with water just to cover bottom of pan until squash is tender and bacon is browned.
  6. Serves 4 to 6.
