Sangria Muffins
Ingredients
- 2 cups all-purpose flour ⓘ
- 2/3 cup granulated sugar ⓘ
- 2 teaspoons baking powder ⓘ
- 1/2 teaspoon baking soda ⓘ
- 1/4 teaspoon sea salt ⓘ
- 1 large egg, beaten ⓘ
- 1/2 cup unsalted butter, melted ⓘ
- 1 cup whole milk ⓘ
- 1/2 cup red wine ⓘ
- 1 tablespoon canola oil ⓘ
- 1 tablespoon lemon juice ⓘ
- 2 teaspoons ground cinnamon ⓘ
- 1 cup fruit, chopped (apple, peach, and orange) ⓘ
Instructions
- Preheat oven to 350°F Coat 12-cup muffin tin with nonstick cooking spray or with paper liners.
- In a large bowl, stir together flour, sugar, baking powder, baking soda, and sea salt.
- In a separate bowl, combine egg, milk, melted butter, red wine, canola oil, lemon juice, and ground cinnamon. Add to dry ingredients with chopped fruit.
- Stir until just moistened. Fill lined muffin cups 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 5 minutes before removing to cool completely.
