Ingredients

  • 5 cups milk
  • 1/2 cup rice
  • 1 egg
  • 2/3 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 cup cream
  • 1/2 cup raisins
  • 1 tablespoon cinnamon and sugar

Instructions

  1. Bring the milk and rice to a boil in a saucepan.
  2. Reduce heat and simmer for 50 minutes, stirring occasionally.
  3. Remove from heat and let cool slightly.
  4. Beat together the egg, sugar, salt, and vanilla in a bowl.
  5. Gradually add the hot milk and rice mixture to the egg mixture, stirring constantly.
  6. Stir in the cream.
  7. Spread raisins evenly in the bottom of a baking dish.
  8. Pour the rice mixture into the dish, stirring to distribute the rice evenly.
  9. Sprinkle with cinnamon and sugar.
  10. Bake in a 350°F oven in a water bath for 30 minutes, increasing cooking time slightly as needed.
  11. Remove from oven, cool, then chill before serving.
