Satsuma Age is a Japanese fish cake delicacy with a savory, subtly sweet flavor, crispy exterior, and tender interior, perfect as an appetizer or snack for seafood lovers.

Ingredients

  • 1 1/2 lb. ground fish meat
  • 6 heaping tsp. sugar
  • 6 Tbsp. cornstarch
  • 1 3/4 c. water
  • 1 Tbsp. salt
  • 1 Tbsp. ajinomoto (optional)
  • 1 egg
  • 1 small gobo
  • 1 small carrot

Instructions

  1. Grind the fish meat in a suribachi or food processor.
  2. While grinding, add sugar and mix well.
  3. Combine cornstarch and water separately.
  4. Add the cornstarch mixture to the fish and mix until soft.
  5. Add salt and mix until the mixture becomes firmer.
  6. Add the beaten egg and mix well.
  7. Fold in the shredded gobo and carrot.
  8. Form the mixture into patties.
  9. Deep fry the patties in hot cooking oil until golden brown.
