Ingredients

  • 1 lb. Loose Italian sausage meat
  • 6 eggs
  • 2 (10 oz.) pkg. frozen spinach, thawed and drained
  • 1 lb. grated Mozzarella cheese
  • 2/3 c. Ricotta cheese
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 to 3 cloves garlic, crushed
  • pie crust for 2 crusts

Instructions

  1. Cook sausage meat over medium heat in a skillet until browned, about 10 minutes.
  2. Stir often and spoon off excess fat.
  3. Reserve 1 egg yolk.
  4. In a large bowl, combine remaining eggs, sausage meat, spinach, Mozzarella cheese, Ricotta cheese, salt, pepper, and garlic.
  5. Prepare pie crust in a 9 or 10-inch pie pan.
  6. Spoon meat mixture into the shell.
  7. Roll out the top crust and place it over the filling in the pie shell. Make a steam vent in the top crust.
  8. Brush the top with the reserved egg yolk mixed with 1 tablespoon of water.
  9. Bake at 375°F for 1 1/4 hours, until golden. Let stand for 10 minutes.
  10. Cut and serve.
