Sausage-Spinach Pie

- Cook sausage meat over medium heat in a skillet until browned, about 10 minutes.
- Stir often and spoon off excess fat.
- Reserve 1 egg yolk.
- In a large bowl, combine remaining eggs, sausage meat, spinach, Mozzarella cheese, Ricotta cheese, salt, pepper, and garlic.
- Prepare pie crust in a 9 or 10-inch pie pan.
- Spoon meat mixture into the shell.
- Roll out the top crust and place it over the filling in the pie shell. Make a steam vent in the top crust.
- Brush the top with the reserved egg yolk mixed with 1 tablespoon of water.
- Bake at 375°F for 1 1/4 hours, until golden. Let stand for 10 minutes.
- Cut and serve.
