Ingredients

  • 6 medium yellow squash
  • 1/2 lb. bulk pork sausage
  • 1/4 c. finely chopped onion
  • 1/2 c. herb seasoned stuffing
  • 1/4 tsp. salt

Instructions

  1. Wash squash thoroughly; cook in boiling salted water to cover for 8 to 10 minutes or until tender but still firm.
  2. Drain and cool slightly.
  3. Trim off stems from the squash.
  4. Cut squash in half lengthwise; remove and reserve pulp, leaving a firm shell.
