Ingredients

  • 5 medium carrots
  • 3 large potatoes
  • 3 medium red onions
  • 3 Tbsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. dried marjoram leaves
  • 1 fully-cooked light kielbasa (1 1/4 lb.)

Instructions

  1. Prepare the outdoor grill for barbecuing.
  2. Peel the carrots and cut each lengthwise in half.
  3. Cut each potato lengthwise into 6 wedges.
  4. Cut each onion lengthwise in half.
  5. In a 12-inch skillet, bring water to a boil and cook carrots, potatoes, and onions for 10 to 15 minutes until tender-crisp.
  6. Drain the vegetables and add olive oil, salt, pepper, and marjoram, tossing to coat well.
  7. Grill the kielbasa until heated through and slightly browned, then serve with the seasoned vegetables.
