Ingredients

  • 4 Cornish hens (about 1 lb. each)
  • 8 slices white bread
  • 1 1/2 Tbsp. parsley flakes
  • 3/4 tsp. salt
  • 1/2 tsp. poultry seasoning
  • 1/4 tsp. freshly ground pepper
  • 3/4 cup butter
  • 1 cup finely chopped onions
  • 4 livers from the hens

Instructions

  1. Remove giblet packs from the hens, wash them, and pat dry.
  2. Cut the crusts from the bread and cut into 1/2-inch cubes.
  3. Place bread cubes on a cookie sheet and bake at 350°F until golden, stirring occasionally; remove from oven.
  4. Combine parsley flakes, salt, pepper, and poultry seasoning; set aside.
  5. In a heavy skillet, melt butter.
  6. Add chopped onions and hen livers; cook until livers are lightly browned and onions are tender.
  7. Remove livers and chop them finely.
  8. Add chopped livers, onions, and butter to the bread cubes; toss to mix well.
  9. Lightly salt and pepper the hens.
  10. Pack the stuffing tightly inside the hens and truss them.
  11. Place hens in an oven-safe baking dish, breast side up.
  12. Brush hens with melted butter and roast at 375°F.
  13. Turn the hens every 15 minutes and baste with butter and pan juices.
  14. Cook for a total of 50 to 60 minutes, until juices run clear when a knife tip is inserted into the hen.
  15. Serve hot.
