- Preheat oven to 425°F. Place roast in a roasting pan. Combine remaining ingredients. Coat roast with herb mixture. Roast for 20 mins. Reduce heat to 350°F and continue roasting for 45 mins to 1 hour or until thermometer inserted into beef reads 135°F for medium-rare. Let stand for 10 mins before slicing. Garnish with halved figs and additionally as desired.
