Ingredients

  • 10 sun-dried tomato halves
  • 2 cups Bisquick original baking mix
  • 1 (8 oz.) package feta cheese
  • 3/4 cup milk
  • 3/4 cup roasted red bell peppers
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh basil
  • 1 clove garlic
  • 2 tablespoons olive or vegetable oil

Instructions

  1. Preheat oven to 425°F.
  2. Lightly spray a 9 x 9-inch square pan with cooking spray.
  3. Cover sun-dried tomato halves with boiling water and let stand for 10 minutes.
  4. Drain the tomatoes and finely chop them.
  5. In a mixing bowl, combine Bisquick baking mix, chopped sun-dried tomatoes, crumbled feta cheese, chopped roasted red bell peppers, chopped herbs, and chopped garlic.
  6. Add milk and olive or vegetable oil to the mixture and stir until well combined.
  7. Transfer the mixture to the prepared pan and shape into a loaf or mound.
  8. Bake in the preheated oven for about 20 minutes or until golden brown and cooked through.
