- Preheat oven to 425°F.
- Lightly spray a 9 x 9-inch square pan with cooking spray.
- Cover sun-dried tomato halves with boiling water and let stand for 10 minutes.
- Drain the tomatoes and finely chop them.
- In a mixing bowl, combine Bisquick baking mix, chopped sun-dried tomatoes, crumbled feta cheese, chopped roasted red bell peppers, chopped herbs, and chopped garlic.
- Add milk and olive or vegetable oil to the mixture and stir until well combined.
- Transfer the mixture to the prepared pan and shape into a loaf or mound.
- Bake in the preheated oven for about 20 minutes or until golden brown and cooked through.
