Ingredients

  • 10 oz. frozen spinach
  • 1 lb. zucchini
  • 1/2 cup bread crumbs
  • 2 eggs
  • 1/2 cup Parmesan cheese
  • 2 Tbsp. chopped parsley
  • salt

Instructions

  1. Cook the spinach and sliced zucchini in a small amount of oil.
  2. Transfer the cooked vegetables to a mixing bowl and mash them.
  3. Stir in bread crumbs, beaten eggs, Parmesan cheese, chopped parsley, salt, pepper, and garlic powder to taste.
  4. Spread the mixture evenly in an 8 x 8 or 9 x 9-inch baking dish.
  5. Sprinkle the top with additional Parmesan cheese.
  6. Bake in a 350°F oven for 30 to 35 minutes until set and golden.
