Scallop Seviche
Ingredients
- 1 1/2 lb. bay scallops ⓘ
- about 2/3 c. fresh lime juice ⓘ
- 1/2 c. chopped onion ⓘ
- 1/4 c. tomato juice ⓘ
- 1 tomato, skinned and chopped ⓘ
- 1/4 c. olive oil ⓘ
- salt and pepper
- 1/3 c. chopped green pepper ⓘ
- 1/8 tsp. Tabasco sauce ⓘ
- 1 clove garlic, finely chopped ⓘ
- 1 Tbsp. finely chopped parsley ⓘ
- 1/2 tsp. thyme ⓘ
Instructions
- Toss the bay scallops with the lime juice.
- Place in a bowl with the remaining ingredients.
- Cover; refrigerate overnight. The lime juice does all the cooking.
- Serves 6.
