Scallop Seviche

Ingredients

  • 1 1/2 lb. bay scallops
  • about 2/3 c. fresh lime juice
  • 1/2 c. chopped onion
  • 1/4 c. tomato juice
  • 1 tomato, skinned and chopped
  • 1/4 c. olive oil
  • salt and pepper
  • 1/3 c. chopped green pepper
  • 1/8 tsp. Tabasco sauce
  • 1 clove garlic, finely chopped
  • 1 Tbsp. finely chopped parsley
  • 1/2 tsp. thyme

Instructions

  1. Toss the bay scallops with the lime juice.
  2. Place in a bowl with the remaining ingredients.
  3. Cover; refrigerate overnight. The lime juice does all the cooking.
  4. Serves 6.
