Ingredients

  • 6 hard-cooked eggs
  • 1/2 lb. ground pork sausage
  • 1/3 cup dry bread crumbs
  • 1 teaspoon ground marjoram
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon pepper
  • 1 egg, beaten

Instructions

  1. Divide the raw sausage into 6 equal parts.
  2. Pat one part evenly around each peeled hard-cooked egg with wet hands.
  3. Mix dry bread crumbs, ground marjoram, salt, nutmeg, and pepper in a bowl.
  4. Dip each sausage-coated egg into the beaten egg, then roll in the bread crumb mixture.
  5. Heat vegetable oil in a 3-quart saucepan to 360°F (182°C).
  6. Fry 3 eggs at a time, turning occasionally, for 4 to 5 minutes until golden brown.
  7. Drain on paper towels.
  8. Refrigerate until cold enough to slice, about 2 hours.
  9. Cut each egg crosswise into 4 sections.
  10. Serve with Dijon style mustard.
