Sweet and crunchy Scotcheroo Bars combine peanut butter, crispy rice cereal, and chocolate and butterscotch chips for a delightful treat perfect for parties or casual snacking.

Ingredients

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 6 cups Rice Krispies
  • 1 cup chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Combine sugar and syrup in a 3-quart saucepan.
  2. Cook over medium heat, stirring frequently, until mixture just comes to a boil.
  3. Remove from heat; stir in peanut butter and mix well.
  4. Add cereal and mix well.
  5. Press mixture into a buttered 9 x 13-inch pan.
  6. Melt chocolate chips and butterscotch chips together over hot, not boiling, water.
  7. Stir until well blended.
  8. Remove from heat and spread over the pressed cereal mixture in the pan.
  9. Allow to cool, then cut into bars.
