Ingredients

  • 1 good sized chicken (hen)
  • 1 pt. orange juice
  • 6 stalks coriander, minced
  • 1 tsp. hot sauce
  • 2 large red onions, chopped
  • 2 tomatoes, diced
  • 2 peppers, diced
  • garlic to taste
  • salt and pepper

Instructions

  1. Cut the chicken into pieces and fry in shortening until golden brown.
  2. Add chopped onions and cook until browned.
  3. Add diced tomatoes, diced peppers, garlic, salt, and pepper; cook until vegetables are tender.
  4. Pour in the orange juice and add hot sauce.
  5. Simmer for an hour or more until the chicken is tender.
  6. Serve hot with rice.
