Ingredients

  • 1 box chocolate cake mix
  • 2 Tbsp. instant coffee
  • 8 oz. cream cheese softened
  • 1/3 cup sugar
  • 1 egg beaten
  • 6 oz. chocolate pieces

Instructions

  1. Preheat oven to 350°F.
  2. Prepare the chocolate cake mix according to package directions, adding the instant coffee to the liquid called for on the box.
  3. Fill paper cupcake cups 2/3 full in muffin tins with the batter.
  4. Bake in the preheated oven for the time specified on the box, or until a toothpick inserted into the center comes out clean.
  5. While cupcakes are baking, beat the softened cream cheese with sugar until smooth.
  6. Add the beaten egg to the cream cheese mixture and mix well.
  7. Place a few chocolate pieces in the center of each baked cupcake immediately after removing from oven.
  8. Once cupcakes are cooled, cut a small hole in the center of each cupcake and fill with the cream cheese mixture.
  9. Replace the cut piece of cake on top to cover the filling, if desired.
