- Preheat oven to 350°F.
- Prepare the chocolate cake mix according to package directions, adding the instant coffee to the liquid called for on the box.
- Fill paper cupcake cups 2/3 full in muffin tins with the batter.
- Bake in the preheated oven for the time specified on the box, or until a toothpick inserted into the center comes out clean.
- While cupcakes are baking, beat the softened cream cheese with sugar until smooth.
- Add the beaten egg to the cream cheese mixture and mix well.
- Place a few chocolate pieces in the center of each baked cupcake immediately after removing from oven.
- Once cupcakes are cooled, cut a small hole in the center of each cupcake and fill with the cream cheese mixture.
- Replace the cut piece of cake on top to cover the filling, if desired.
