Ingredients

  • 11 oz. Raisin Bran
  • 3 cups sugar
  • 5 cups sifted flour
  • 5 teaspoons baking soda
  • 1 teaspoon salt
  • 4 beaten eggs
  • 1 cup melted shortening, cooled

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine Raisin Bran, sugar, sifted flour, baking soda, and salt.
  3. In a separate bowl, beat the eggs and then stir in the melted, cooled shortening.
  4. Pour the egg mixture into the dry ingredients and stir until just combined.
  5. Spoon batter into greased muffin tins, filling each cup about two-thirds full.
  6. Bake for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool slightly before removing from the tin and serving.
