Ingredients

  • 1 Tbsp. sugar
  • 1 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1 c. rice vinegar
  • 2 Tbsp. water
  • 2 very thinly sliced, large, unpeeled cucumbers
  • 1 c. diagonally sliced celery
  • 1/4 lb. cooked small shrimp
  • 1/4 lb. cooked small scallops

Instructions

  1. Combine sugar, cornstarch, and salt in a small saucepan.
  2. Stir in vinegar and water.
  3. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
  4. Remove from heat and cool completely.
