Ingredients

  • 1 cup quick precooked rice
  • 1 cup canned whole kernel corn, drained
  • salt and pepper to taste
  • 1 (8 oz.) can tomato sauce
  • 1 cup water
  • approximately 1/2 cup corn liquid
  • 1/2 cup finely chopped onion
  • 1/2 cup chopped green pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the ingredients in layers in a 2-quart baking dish with a tight-fitting lid: first the rice, second the corn (drained), sprinkle with salt and pepper, third the tomato sauce, fourth the water and corn liquid, fifth the chopped onion and green pepper, sixth the ground beef on top (seasoned with salt and pepper), and finally cover the meat with bacon.
  3. Cover the dish and bake at 350°F (175°C) for 1 hour or longer.
  4. Uncover and bake about 30 minutes longer to crisp the bacon.
  5. Serve hot, yielding 4 to 5 servings.
