Ingredients

  • 1 1/2 cups sugar
  • 2 egg whites
  • 5 tablespoons water
  • 1/8 teaspoon cream of tartar
  • 6 large marshmallows, cut in small pieces
  • 1/2 teaspoon vanilla

Instructions

  1. Put all ingredients, except vanilla, in the top of a boiler.
  2. Stir until well mixed.
  3. Place over simmering, but not boiling, water.
  4. Cook, beating constantly with electric mixer at high speed, for about 7 minutes, or until icing becomes stiff and glossy.
  5. Remove from heat and add vanilla.
  6. Stir until blended.
