Ingredients

  • 1 cup cornmeal
  • 1 quart sweet milk
  • 3 eggs
  • 2 tablespoons butter
  • 1 3/4 teaspoons salt
  • 1/2 teaspoon baking powder

Instructions

  1. Scald the sweet milk and gradually add the cornmeal, stirring continuously.
  2. Cook until the mixture becomes thick, then pour a small amount over the beaten egg yolks.
  3. Return the mixture to the heat and cook for a few minutes longer.
  4. Add butter and fold in the beaten egg whites. Then add baking powder and salt.
  5. Pour the batter into a greased baking dish.
  6. Bake at 325°F (163°C) for 1 1/2 hours.
  7. Stir once after the first 15 minutes of baking.
