Ingredients

  • 4 c. water
  • 6 c. diced potatoes
  • 1 c. diced celery
  • 1/2 c. diced onions
  • 1 tsp. parsley flakes
  • dash of pepper
  • 5 Tbsp. flour
  • 4 c. milk
  • 1/2 lb. Velveeta
  • 1 1/2 tsp. salt
  • 3 chicken bouillon cubes

Instructions

  1. Put potatoes, celery, onions, parsley flakes, and chicken bouillon cubes in water and cook until tender.
  2. Blend flour with a small amount of milk to make a smooth mixture.
  3. Stir the flour mixture into the cooked vegetables and water.
  4. Add remaining milk and heat the soup, but do not bring to a boil.
  5. Add the cubed Velveeta cheese and stir until melted and smooth.
  6. Cover the soup and remove from heat.
  7. Stir to blend before serving.
