Ingredients

  • 3 cups flour
  • 1 cup light brown sugar
  • 1/3 cup shortening
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 large egg
  • 1/4 cup molasses
  • 1 cup water

Instructions

  1. In a large bowl, combine 2 cups of flour and brown sugar. Cut in shortening with a pastry blender until fine crumbs.
  2. Remove 1/2 cup of crumbs and set aside.
  3. To the remaining crumbs, add 1 cup of flour, baking powder, and baking soda. Stir until well blended.
  4. Mix together the egg, molasses, and water. Add to the crumb mixture and stir by hand just until blended.
  5. Pour the batter into a well-greased and floured 5 x 9-inch loaf pan.
  6. Sprinkle the reserved 1/2 cup of crumbs on top.
  7. Bake at 350°F (175°C) for 55 to 65 minutes or until tests done.
