Short-Cut Spinach Lasagna

Ingredients

  • 1 lb ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1 egg
  • 10 oz frozen chopped spinach, thawed and drained
  • 1 teaspoon salt
  • 3/4 teaspoon oregano
  • 2 jars (15 1/2 oz) spaghetti sauce
  • 8 oz lasagna noodles

Instructions

  1. In a large bowl, mix ricotta cheese, 1 cup shredded mozzarella cheese, egg, thawed and drained chopped spinach, salt, and oregano.
  2. Place 1/2 cup spaghetti sauce in the bottom of a greased 13 x 9-inch baking pan.
  3. Top with one-third of the lasagna noodles.
  4. Cover noodles with half of the cheese mixture.
  5. Repeat the layers: sauce, noodles, cheese mixture.
  6. Top with the remaining noodles.
  7. Pour the remaining spaghetti sauce over the top.
  8. Sprinkle with the remaining mozzarella cheese.
  9. Pour water around the edges of the pan.
  10. Cover with foil and bake at 350°F (175°C) for 1 hour.
  11. Remove the foil and bake for an additional 15 minutes.
  12. Let stand for 15 minutes before cutting and serving.
