Ingredients

  • 3 lb. frozen shrimp, peeled and drained
  • 2 qt. water
  • 1 Tbsp. salt
  • 4 large bunches curly endive
  • 1 styrofoam cone (2 1/2 feet high)
  • 1 styrofoam square (12 x 12 x 1-inch)
  • 1 small box round toothpicks

Instructions

  1. Place frozen shrimp in salted boiling water.
  2. Let the shrimp return to a boil and cook for 2 to 3 minutes.
  3. Drain the shrimp and chill them.
  4. Separate and wash the endive leaves, then drain well and chill.
  5. Place the styrofoam cone in the center of the styrofoam square and draw a circle around its base.
  6. Cut out the circle and insert the cone into it.
  7. Cover the base and cone with overlapping endive leaves, fastening with toothpick halves.
  8. Start at the outside edge of the base and work upward, covering fully to resemble a Christmas tree.
  9. Attach shrimp to the tree using toothpicks.
  10. Add cherry tomatoes with toothpicks around the cone to resemble ornaments.
  11. Serve with cocktail sauce for dipping.
