Ingredients

  • 3 lb. shrimp, peeled and deveined
  • 3/4 lb. Feta cheese, crumbled
  • 1 small onion
  • 2 cloves garlic
  • 1 Tbsp. oregano
  • 1 large can crushed tomatoes
  • 3/4 c. sherry or Ouzo

Instructions

  1. Combine oregano, crushed tomatoes, onion, garlic, and sherry in a saucepan and simmer for 1 hour to make the sauce.
  2. Spread the peeled and deveined shrimp in a single layer in a shallow ovenproof dish.
  3. Pour the warm tomato sauce over the shrimp.
  4. Sprinkle the crumbled Feta cheese on top.
  5. Bake in a 450°F oven until the shrimp are cooked through, which doesn't take long.
  6. Serve with French bread or over orzo pasta.
