Shrimp Monroe is a creamy, savory seafood dish featuring tender shrimp, mushrooms, and green onions in a rich sherry and sour cream sauce, perfect for a comforting meal.

Ingredients

  • 1/2 stick butter
  • 2 cloves garlic, minced
  • 1 small bunch green onions
  • 1 lb. cooked shrimp
  • 8 oz. sliced mushrooms
  • 1 Tbsp. flour
  • salt to taste
  • pepper to taste
  • 8 oz. sour cream

Instructions

  1. Finely mince the green onions.
  2. Sauté the green onions and sliced mushrooms in butter and garlic until fragrant and mushrooms are tender.
  3. Add cooked shrimp to the vegetables and cook briefly.
  4. Blend flour into sherry and add to the shrimp mixture, stirring until the sauce thickens.
  5. Season with salt and freshly ground pepper.
  6. Just before serving, add sour cream and warm through without boiling.
  7. Serve over rice or angel hair pasta, thinning with milk if needed.
