Ingredients

  • 2 cups uncooked noodles
  • 2 cups coarsely chopped zucchini
  • 1/2 cup sliced celery
  • 1/4 cup sliced ripe olives
  • 1 can or 4 oz. frozen salad shrimp, rinsed and drained
  • Horseradish Dressing
  • salad greens

Instructions

  1. Cook noodles; drain and set aside to cool slightly.
  2. Mix cooked noodles, coarsely chopped zucchini, sliced celery, sliced ripe olives, and rinsed and drained frozen salad shrimp in a large bowl.
  3. Add horseradish dressing and mix well.
  4. Chill the salad for 2 hours, but no longer than 24 hours.
  5. Spoon the chilled salad onto salad greens before serving.
