A hearty baked fish dish featuring haddock, sole, and scallops layered with cheese and seasoned with sage and garlic, topped with crumbly Ritz crackers for a flavorful meal.

Ingredients

  • 1 lb. haddock
  • 1/2 lb. fillet of sole
  • 3/4 lb. sea scallops
  • 1 tsp. garlic powder
  • 1 1/2 tsp. sage
  • 1/3 stick butter
  • lemon pepper
  • Velveeta cheese
  • dash of milk
  • 1 Tbsp. parsley

Instructions

  1. Set oven to 325°F (163°C).
  2. Clean the fish and arrange it in an 11 x 13-inch baking dish.
  3. Layer the fillet of sole over the haddock and scatter the scallops on top.
  4. Sprinkle lemon pepper and a dash of milk over the fish.
  5. Slice the Velveeta cheese and lay it over the fish.
  6. Crumble 1 1/2 rolls of Ritz crackers into a bowl.
  7. Add garlic powder, sage, and parsley to the cracker crumbs.
  8. Toss the cracker mixture together.
  9. Melt the butter and sprinkle it over the cracker topping until evenly coated.
  10. Spread the crumb mixture over the fish and cheese layer.
  11. Bake the dish for 40 minutes.
  12. If the crumb topping starts to brown prematurely, cover the dish with aluminum foil.
  13. Serve hot, optionally with vegetable rice pilaf, broccoli, and Chardonnay.
