- Set oven to 325°F (163°C).
- Clean the fish and arrange it in an 11 x 13-inch baking dish.
- Layer the fillet of sole over the haddock and scatter the scallops on top.
- Sprinkle lemon pepper and a dash of milk over the fish.
- Slice the Velveeta cheese and lay it over the fish.
- Crumble 1 1/2 rolls of Ritz crackers into a bowl.
- Add garlic powder, sage, and parsley to the cracker crumbs.
- Toss the cracker mixture together.
- Melt the butter and sprinkle it over the cracker topping until evenly coated.
- Spread the crumb mixture over the fish and cheese layer.
- Bake the dish for 40 minutes.
- If the crumb topping starts to brown prematurely, cover the dish with aluminum foil.
- Serve hot, optionally with vegetable rice pilaf, broccoli, and Chardonnay.
