Ingredients

  • 8 - 10 lg shrimp
  • milk
  • flour
  • 1 C olive oil
  • 1/2 C veg. oil
  • 1 egg yolk
  • 1 stick butter
  • 1/2 tsp parsley
  • juice of 1/2 lemon
  • 2 cloves garlic
  • 1/2 tsp chives

Instructions

  1. Soak shrimp in milk 10 min. Drain and dredge in flour. Saute in oils for 5 min. Place under preheated broiler 5 min. until crispy golden. Drain
  2. In saucepan mix egg and lemon juice. Add 1/2 stick butter and stir until thick. Add rest of butter a little at a time and garlic. Stir gently. Add chive and parsley and pour over shrimp
