Ingredients

  • 1 lb. ground beef
  • 1 large green pepper
  • 8 oz. kielbasa
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 3 medium potatoes
  • 1 large onion
  • 1 (10 oz.) pkg. frozen corn
  • 1 1/2 c. Cheddar cheese

Instructions

  1. Brown ground beef.
  2. Stir in potatoes (unpeeled and coarsely chopped), green pepper (chopped), large onion (chopped), kielbasa (cut into bite-sized pieces), corn, salt and pepper.
  3. Cook, covered, in skillet over medium heat 20 minutes, stirring occasionally.
  4. Stir in 1 cup shredded Cheddar cheese and top with remaining 1/2 cup cheese, shredded.
  5. Makes 8 servings.
