Ingredients

  • 1 fryer or 4 to 6 chicken breasts
  • 1 can celery soup
  • 1 can milk
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon curry powder (optional)
  • 1 (8 oz.) package herb stuffing mix
  • 1 or 2 stalks celery, diced
  • 1 can chicken broth

Instructions

  1. Boil the chicken until tender, then remove all bones and skin.
  2. Cut the chicken into desired size pieces.
  3. Spread the chicken evenly on the bottom of a 10 x 10 x 20-inch casserole dish.
  4. Mix 3/4 of the stuffing mix with chicken broth, celery soup, milk, diced celery, celery salt, and curry powder if using.
  5. Pour this mixture over the chicken in the dish.
  6. Sprinkle the remaining 1/4 of the stuffing mix over the top.
  7. Pour some of the chicken broth around the edges of the casserole to prevent sticking.
  8. Optional: sprinkle melted butter over the top.
  9. Bake uncovered for 20 to 30 minutes at 325°F or until browned on top.
